I’ve mentioned before that I have a rather large sweet tooth. Large is putting it mildly… it’s massive.
It craves sweets… particularly chocolate.
However, over the past several years I’ve been trying to not eat too much refined sugar. I’m gradually making the switch to more natural sweeteners and trying to find healthier versions of my favorite sweets!
Enter in this fudge. It is sweet, it is chocolaty it is nice and fudgy….
The real test? The teenager ate a piece and said, “this sure doesn’t taste healthy!”
Now I used regular old peanut butter, if you want it truly refined sugar free you’d need to use a natural sugar free peanut butter, in which case I’d probably up the honey. If you try it I’d love to know how it turns out!
Here’s what you’ll need:
1/2 Cup Coconut oil
1/2 Cup Cocoa Powder
1/4 Cup Honey
1/2 Cup Peanut Butter
1 tsp Vanilla
1/4 tsp salt
First line a 8×8 baking sheet with parchment paper. This makes it super easy to lift the fudge out when it is done.
Next in a saucepan over med/low heat add in the coconut oil, peanut butter and honey. Cook, stirring continuously until they are all nice and melted and blended together. Now add in the cocoa powder and stir, making sure there are no lumps. Stir in the vanilla and salt.
Now pour your mixture into your prepared pan. It is super runny, that’s ok.
Pop the whole thing in the fridge and let cool for at least 1/2 an hour.
Once it’s completely cool and set you can lift out the parchment and cut it into squares. I do recommend keeping it refrigerated because it softens pretty quickly.
Just like with regular fudge you could top this with chopped nuts, sprinkles… whatever you’d like! It’s delicious!!
