Cookies for breakfast?
You see these are cookies, but they are free of any processed sugar and chock full of oats and apples.
Basically they’re like baked oatmeal but in cookie form.
Which makes children happy, and breakfast easy!
These are such a simple grab and go breakfast, hearty and delicious, pretty perfect for a busy weekday!
Here’s what you’ll need
1- Cup Quick Cooking Oats
3/4- Cup Whole Wheat Flour
1 1/2- tsp Baking Powder
1/4- tsp Salt
1 1/2- tsp Cinnamon
2- Tbsp Coconut Oil (melted)
1 1/2 -tsp Vanilla
1- Cup Very Finely Chopped Apple
1/2 – Cup Honey
Get your oven preheating to 325 and line a baking sheet with parchment paper.
In a large mixing bowl combine oatmeal, flour, cinnamon, salt, and baking powder. Add in the oil, egg, vanilla, and honey mix until well combined.
Now fold in the apple until evenly incorporated. Refrigerate for about 30 minutes.
I made mine nice and big using an ice cream scoop, you can make them smaller if you’d like you may have to adjust the cooking time.
Scoop the dough onto the prepared baking sheets and press down on the top to flatten them down. They don’t spread much but you want to leave a little room in between them.
Bake them for 13-15 minutes, until they are set. Allow to cool on the sheet for 5-10 minutes before moving to a rack to cool completely.
Now enjoy cookies for breakfast!! (Or you can eat them other times too… I won’t tell!)
