Pumpkin and chocolate?
The combination has been making its rounds on Pinterest, and I had to wonder about it.
I love pumpkin and I love chocolate… but the two together?
But then this recipe popped up on my feed and oh my… it had to be tried. These just screamed “I am fudgy, and delicious, and you need to make me!!” (btw… giving credit where it is due, this recipe comes from Averie Cooks)
They were right. I had to make them…
Here’s what you’ll need
1/2 Cup Butter- melted
1- Large Egg
3/4 – Cup Pumpkin Puree
1-Cup Brown Sugar- packed
1- Tbsp Vanilla
2-tsp Pumpkin Pie Spice
1- tsp Cinnamon
1 1/4- Cups Flour
1 1/4- Cups Chocolate Chips
First get your oven preheating to 350 and grease a 8×8 in. baking pan.
Next melt your butter in a large bowl. Add your pumpkin, brown sugar and egg and stir until they are nicely mixed. Add in the vanilla, pumpkin pie spice and cinnamon and stir well. Now add in your flour 1/4 cup at a time until it is incorporated.
Now fold in the chocolate chips.
Spread the batter into your prepared pan. At this point if you want you can throw some more chocolate chips on the top… but that’s not necessary.
Now pop it in the oven for 30-35 minutes. Like I said these are fudgy so the best way to tell if they’re done is to test them with a knife. If it comes out clean you know they’re ready. (clean as in no batter… it will have melted chocolate on it!)
Let them cool, cut up and enjoy!
