Ok here it is.
Two of my favorite things meshed into one delicious salad. If you’ve been following me for awhile you know I love a buffalo flavor and that quinoa is my friend.
So this salad?? Perfect.
It is also super easy, and if you want to you can make it whole meal by throwing some grilled chicken in there. There’s dinner, delicious, healthy, with just a little kick!
Here’s what you’ll need.
1/2 – Cup Buffalo Wing Sauce ( pay attention here, you want wing sauce, not just plain hot sauce.. I love Sweet Baby Ray’s)
1/2 – Cup Greek Yogurt (you could use sour cream too, but the yogurt makes it that much healither)
3- Cups Cooked Quinoa- cooled
1/2 – Container Crumbled Blue Cheese plus a little more for garnish
1/4- Cup Chopped Celery
1/4- Cup Chopped Green Onion (about 3 green onions)
In a small bowl mix your wing sauce and greek yogurt. Toss your onions, celery and quinoa together until well mixed then top with the sauce. Now mix in your blue cheese.
That’s it… super easy right?? You can garnish it with a little more blue cheese, celery and green onion if you want to be fancy. Or you can just eat it… because it’s that good!!
