So a few weeks ago I had to get my transmission serviced.
I waited for my car and despite being warned when I made the appointment that it would take about 3 hours I failed to pack myself any snacks…
When I was done I was really hungry, I had to stop at the drug store for a couple of other things and while I was there I grabbed a couple of snack bars. One of them was a Peanut Butter Chocolate Chip LARABAR and after one bite I fell in love.
Yep in love with a Larabar…. well taste bud love anyway.
I decided that I needed to figure out how to make these delicious treats, especially after I looked on the package and saw there was only a handful of ingredients.
I opted to make balls instead of bars. I’m not sure what sort of super-sonic bar squisher the folks at Larabar have to make theirs so well stuck together but I found balls are less crumbly than bars.
These are super tasty, make a great snack, and are free of any suspicious ingredients.
I made a fairly small batch, mostly because I have a wee tiny little food processor, this could easily be doubled… and you’ll probably want to!
Here’s what you’ll need
15- Dates (I find dates hard to measure so I just count them out)
1/3- Cup Peanuts (I recommend unsalted, if using salted you might want to skip the sea salt)
1/4- tsp Sea Salt
1- Tbsp Peanut Butter
Start by putting the dates in the food processor and chop until they are in medium chunks, then add the peanuts, and salt pulse until everything is pretty evenly chopped into small pieces, now add the pb and chocolate chips, pulse more until the chocolate chips are well blended in.
Adding the chocolate chips last lets some bigger chunks of chocolate remain.
Now roll the mixture into balls, if it’s a little too dry add a few drops of water.
Now eat them… try not to eat the whole plate… tell yourself you have to leave some for the kids… or finish them off before the kids see them!!
