I have this friend named Tina who is an organic foodie. She travels far out of our little small town to shop at the stores that actually have a large selection of good for you foods.
And when she can’t go get them she has them come to her.
Then she puts things on Facebook like – “I’m ordering 115lbs of organic chocolate chips and need people to split them with me. Anyone interested?”
And then the chocoholic in me says… “Organic chocolate chips? That’s practically like eating a salad.”
So that is how I found myself with ziploc baggies of chocolate chips dished out of a box that I could have gladly sunk my face into and ended up in a diabetic coma.
But instead I decided to make something tasty out of them and eat them like a civilized person.
So I made these, and I made them mini so that I could eat several and feel ok about it. Plus they have a very cookie like texture so they would be awkward as full sized muffins.
