I woke up to snow this morning. About 2 inches covering the trees, the ground and the cars. It is absolutely beautiful… but a little early. It is still November isn’t it? I’m still in fall mode.
Snow makes me want to break out the Christmas tunes and start baking cookies!!
But since it is still fall, and I’m not letting that go yet, we’ll go ahead with the baking but make up some tasty fall flavored muffins!
What you’ll need
2- Cups of flour
1-tsp Baking Powder
1/2 tsp Baking Soda
1/2 tsp Salt
1/2 Cup Oil
1- Cup Sugar
1 1/2 – tsp Vanilla
3/4 Cups Finely Chopped Apples
3/4 Cups Grated Apples
(your apples will total 2 or 3)
For the topping-
1/3 Cup Brown Sugar (packed)
1- Tbsp Flour
1/8 tsp Cinnamon
1- Tbsp Butter
Preheat your oven to 375 and line your muffin pan with liners (or spray, I prefer liners)
In a medium bowl combine flour, baking powder, baking soda, and salt.
In a large bowl mix oil, sugar and eggs until smooth. Add in the vanilla, then the apples. Gradually blend in the flour mixture.
This batter is pretty thick, don’t be alarmed.
Scoop the batter into your muffin pans.
In a small bowl combine the brown sugar, flour and cinnamon for the topping. Cut the butter in until it is a nice crumbly mixture.
Sprinkle topping over each muffin.
Bake 15-20 minutes.
Enjoy the taste of fall…. even if it’s snowing outside!
